Pumpkin Oatmeal Cookies with cranberries..
..cinnamon and ginger. What´s not to love about these cookies!
I love baked oatmeal and was dying to make cookies with it this Fall!
..but the pumpkin needed to be in there! Just imagine all the flavours of cranberries, oatmeal, ginger and cinnamon.. all together in one very delicious, soft oatmeal cookie!
I absolutely love easy recipes especially during the holiday season when there is so much baking going on. This recipe is one of those and the best part is that you don´t need to whip out your stand mixer! Your balloon whisk will do *smile*.
Another great thing about this cookie recipe is that it´s quite versatile..you can serve it at breakfast, snacks for the kids for school, etc.
Ingredients
- 1 cup/225g/2 sticks melted butter
- 1 cup brown sugar
- 1 cup sugar
- 1 cup pumpkin puree (I used the tinned version this time)
- 1 egg
- 1 tsp. vanilla extract
- 2 cups flour
- 1 1/3 cups oatmeal
- 1 tsp. baking soda
- 1/2 tsp ginger
- 1-2 tsp. cinnamon
- 1/4 tsp. salt
- 1 cup dried cranberries
- Optional choices: 3/4 cup semi sweet / white chocolate chips, 1 cup raisins, 1/2 cup chopped nuts
Instructions
- Mix together the flour, oats, salt, baking soda, ginger and cinnamon in a bowl. In a mixing bowl blend together the melted butter and sugars until fluffy. Add the pumpkin, egg and vanilla extract and mix well. Add the flour mixture and mix. Add the dried cranberries.
- Line a large cookie pan with parchment paper. Use your large or small ice cream scooper to drop spoonfuls of dough on the pan, You will get 12 (small) and 6 (large) cookies on one pan.
- Bake in a preheated oven at 350ºF / 175ºC for 25-30 minutes (large cookies) or 15-20 minutes (smaller cookies). Cool on a wire rack.
- Enjoy!!
Quick info on the difference between oats and oatmeal
Oatmeal is the kind you use in porridge and although Oats is suitable for human consumption like oatmeal and rolled oats, it´s most commonly used is as livestock fee. Now you know thanks to Wikipedia!
