Peanut Butterscotch Cake
Peanut Butterscotch Cake made with peanut butter, filled and topped with delicious butterscotch frosting and butterscotch sauce and salted peanuts! So good!
Heaven in a cake!
This rich peanut butter cake is good on its own but my oh my add homemade butterscotch sauce to it and you´re in heaven! Are you drooling yet?
Delicious doesn´t mean hard
I can promise you this cake was easy to make, no special skills were required but the end result was a delicious looking cake that kinda resembles a Snicker bar.. It wasn´t my intention though *smile*.
I made 1 x 20cm mold cake and cut it into two, if you want a taller cake you just have to double the recipe.. to make this cake please follow the recipe below:
INGREDIENTS
for the cake batter:
- 1 cup of sunflower oil
- 200g of white sugar
- 4L eggs at room temperature
- 1 teaspoon of vanilla essence
- 200g of white flour (this can easily be replaced by gluten free flour)
- 2 teaspoons of baking powder
- pinch of salt
- 3 heaped tablespoons of peanut butter (softened slightly in your microwave oven)
- 1 & 1/2 cups of brown sugar
- 200ml of cream (35%)
- 1/4 cup of unsalted butter
- 2 teaspoons of vanilla essence
- 300g of unsalted butter at room temperature
- 1 teaspoon of vanilla essence
- pinch of salt
- 250g of sifted icing sugar
- 1/2 cup of butterscotch sauce
- salted peanuts

I feel ya–where does the time go?! This cake sounds incredible, I’m such a sweet-and-salty person, I know I would go crazy for it. Butterscotch and peanuts is such a nice change from caramel and peanuts, too!
Johlene Orton says
Thanks you! I agree when something is too sweet I generally dont like it but when combined with salty I love it! Xx
